Experimenting with recipes has always been my “inner-calling”, to put it mildly, and even more so when I decided to switch my regular diet to mostly plant-based.
One of the biggest challenges was making my favorite Mexican cuisine still work for me, especially because most of my favorite recipes include chicken (I mean do I even need to mention the delicious chicken fajitas, or tacos, or tamales? 🤤)
It wasn’t an easy task to find a good chicken alternative for these recipes, but that was until I discovered Gorton’s seafood products. It’s interesting because ever since I started switching chicken with Gorton’s seafood (especially their fish sticks), I don’t even crave chicken anymore. Easy and Delicious Honey Mustard Fish Tacos
Equipment
- Pan
Ingredients
- 1 box Gorton's Crunchy Breaded Fish Sticks
- 1 Avocado
- 1 bottle Honey Mustard
- 2 cloves Garlic
- 1 Lemon
- 1 Onion
- 1 box Taco Shells
- 1 pack Cherry Tomatoes
- 1 can Corn
- 1 bag Salad Mix
- 1 Feta Cheese
Instructions
Taco filling preparation
- Chop the salad mix, onion and cherry tomatoes.
- Line a pan with baking paper and drizzle lightly with olive oil.
- Put the Gorton's Crunchy Breaded Fish Sticks in the pan and bake in the oven for 10-15 minutes.
- Take the fish stick out of the pan, let them cool down for a few minutes and then chop them.
- Take out the taco shells from the box and start filling by applying a coat of honey mustard first. You can add the rest of the ingredients to your own liking – salad, onion, fish sticks, tomatoes, feta cheese.
Guacamole sauce
- Chop the avocado and onion and add to your blender.
- Add olive oil, salt, lemon juice and blend until you get a creamy consistency.
- You can add the guacamole sauce to your tacos or use it as a dip.
Final thoughts
This is one of my favorite recipes so far, especially for family gatherings or even game nights. Everyone is crazy about these tacos!
My 3 year old daughter Selena is very picky about her food, but Gorton’s fish sticks are one of the few things she actually loves eating. This is why I love using their products even more, because they guarantee success with every recipe I make for her. I’m sure all moms would agree that one of the biggest disappointments is making food for your child only for them to refuse eating it, right?
Besides, seafood is a much healthier alternative to regular meat. The USDA’s recommendation is to eat fish at least twice a week because fish is packed with omega-3 fatty acids and immunity-boosting vitamins and minerals such as vitamin D, B2, magnesium, zinc, calcium, etc.
If you’re not doing it already, you should definitely consider making two seafood-based meals for your family every week. It’s the healthy way to go!
